DESCRIPTION
- Hillside vineyard in Montigny
- Located 7 Km from Sancerre
- Clay and limestone soil – Kimmeridgian marl, called “Saint Doulchard” marl
- Vineyards and soil regularly maintained
- Destalking, pressing selection, cold racking of the must
- Fermentation with temperature control in stainless steel vats
- Aging on fine lees
- Precipitation of the tartaric acids through the action of the winter cold in our cellars
WINE TASTING NOTES
- Sensations :
- Colour: Pale yellow, golden highlights.
- Nose: still relatively subtle, after some swirling releases fruity fragrances (flambéed pineapple, dried oranges) with a hint of caramel cream and pine sap.
- In the mouth: The same fruitiness allied with a smooth roundness.
Slightly acidulous finish with a hint of meringue fragrances.
- - Food and wine pairing: Ideal to accompany perch or pike, served hot or cold, open sandwiches of prawns or gorgonzola, scrambled egg and salmon canapés…
- Ideal serving temperature: 14°C
